Variations of several per cents of fat may sometimes occur from day to day, or milking to milking, in the milk from single cows; variations amounting to I per cent are common. Herd milk varies much less, the percentages of fat on subsequent days being as a rule within two tenths of one per cent, and only exceptionally near one per cent.
